Chocolate Chip Cookies

Recipe

2 1/2 cups All Purpose Flour
1 tsp Salt
1 1/2 tsp Baking Soda
3/4 cups Granulated Sugar
1 cup Light brown Sugar
2 large Eggs
2 tsp Vanilla Extract
1/4 cup softened Butter
( Heat in microwave for 10 sec)
3/4 cup Shortening
1 1/2 cups Semi-Sweet Chocolate Chips

Directions

  1. Preheat the oven to 325 degrees, and spray a sheet pan or line with parchment paper.
  2. In a medium sized bowl combine the Flour, salt, and baking soda mix until combined.
  3. In a stand mixer cream butter, shortening, brown sugar, and granulated sugar. beat on medium high speed for 3 minutes, scrape down the sides and then add the egg’s one at a time, then add the vanilla extract. Scrape down the sides of the bowl, then slowly add in the flour mixture, once mixed together fold in the chocolate chips.
  4. Cover the cookie dough with plastic wrap and place in the freezer for half hour, remove from freezer and scoop with a 1 Tablespoon cookie scoop or a 1 tablespoon measure, place one the middle rack of the preheated oven and, bake for 14 minutes, remove from the oven and let rest on pan for 2 minutes and then move them to a wire rack to cool.

Note: The cookies will look underdone when removed from the oven so you must let them rest on the pan for the 2 minutes.

Ginger Cookie Sandwich

Cookie:

3 cups All Purpose Flour
1 tsp Salt
1 1/2 tsp baking soda
1 1/2 tsp Ground Cinnamon
3/4 tsp Ground Cloves
1 tsp Ground ginger
1/3 cup Molasses
6 tablespoons Softened Butter
2/3 cup shortening
1 1/2 granulated Sugar
2 large eggs

Molasses Cream Filling:

1 stick softened Butter
1/4 cup shortening
4 cups powdered sugar
1 tablespoons molasses
1/2 tsp All Spice
2-4 tablespoons heavy cream or half & half cream

 

 

  1. Preheat oven to 325 degrees and grease or line a sheet pan with parchment paper

 

2.In a medium sized bowl combine Flour, salt, baking soda, cloves, ginger.

3.In a stand mixer cream butter, shortening, add the sugar, molasses, and eggs, mix until well combined, scrape down the sides then add the flour mixtures and mix for a couple minutes, place in freezer for 5 minutes, then scoop on to greased baking sheet and bake for 12-14 minutes , remove from oven and take off and place on wire rack to cool.

 

4. For the Cream Filling, combine all the ingredients and whip up until light and fluffy. When cookies have cooled spread the frosting in the middle and make a sandwich
